MEE KUNING


MEE KUNING -Menghasilkan 700 g mee kuning


Bahan-bahan:


350g tepung high protein
2 biji putih telur - boleh juga ganti kpd 1 biji telur
1 sudu kecil air kapur
100 ml air
sedikit pewarna kuning
1 sudu kecil garam (paras rata)
6 sudu besar minyak masak atau secukupnya
sedikit tepung utk taburan

Cara membuat:

1. Ayak tepung ke dalam mangkuk besar, buat lubang ditengahnya
2. Di dalam bekas lain campurkan telur, air kapur, air, pewarna kuning dan garam kemudian kacau sebati
3. Curahkan campuran air tadi ketengah2 tepung.
4. Uli sehingga sebati dan menjadi doh yg kental
5. Bahagi doh kpd 4 bahagian
6. Ambil 1 bahagian, leperkan kemudian lalukan ke dlm mesin (guna yg paling tebal, bermula no 1 kalau mesin K.Noor)
7. Kemudian ulang menggeleknya sehingga hasilnya licin dgn menggunakan ketebalan yg makin berkurangan
8. Pilih ketebalan yg dikehendaki (K.Noor guna no 4), gelek utk kali terakhir disini
9. Sapukan sedikit tepung atasnya (supaya bila mee keluar ianya tak melekat antara satu sama lain) kemudian lalukan kpd mesin juraian mee
10. Ulang begini sehingga abis ke empat2 bahagian doh tadi
11. Bila dah selesai kesemuanya, didihkan air masukkan 3 sudu besar minyak dlm air tersebut
12. Celur mee dlm air mendidih (guna api perlahan) selama 2 minit (jgn celur sekali gus, celur sket2 mee tu)
13. Kemudian toskan mee tersbt, gaul dgn 3 sudu besar minyak masak
14. Sedia utk digunakan atau boleh disimpan dlm peti sejuk selama 3-4 hari.








Akhirnya jadi juga project mee kuning homemade....hehehehehe. Hubby cakap sedap dari kat kedai..Next time leh le buat sendiri kalau malas nak p beli kat kedai.



Sizzling Mee

Ingredients

-150g egg noodles (yee foo mein)

Sauce ingredients:

-150g boneless chicken meat
-3 small whole Chinese black mushrooms, soaked
-25g carrots, cut into flowers and parboiled
-1 tbsp ginger juice

Seasoning:
-1 tbsp oyster sauce
-1 tsp light soya sauce
-1 tsp sesame oil
-Salt to taste
-1/4 tsp sugar
-Dash of pepper
-1 tsp corn flour
-1/2 tsp chicken stock granules
-1 cup water or stock

Method

Preparation of noodle:Scald noodles in boiling water to soften. Remove and put noodles in a colander and run tap water through it. Arrange noodles on a plate. Add 1/2 tbsp oil and 1/2 tsp sesame oil — mix thoroughly and leave aside.

For the gravy: Heat 2 tbsp oil, add ginger juice and mushrooms and chicken; stir-fry well. Add seasoning and stock. Bring to a boil and simmer for five to 10 minutes. Add carrots and thickening.

Heat a hot plate over medium heat until really hot. Bring away from heat and place on a wooden base. Place ready-cooked noodles on hot plate and pour sauce over immediately. Noodles and sauce will start sizzling. Serve immediately with sliced red chillies and cilipadi.

Lastly jadi la sizzling mee....hehehehehe. Memula ingat nak buat mee goreng je..tapi semlm hubby dah warning kalau mee goreng mamak ok r, heheheheheh ..teringat lak sizzling mee...apa lagi tengok bahan utama ada...laju je buat...bahan sampingan tu tak kisah sangat...hehehehhe

Mukhriz pun laju hirup kuah...hahahahaah, karipap pusing 2 keping dia makan..Hari ni kuat betul dia makan...Bila tanya sedap tak? Siap angguk kepala...heheeheheh.. sedap le tu..sampai makan tak hirau orang lain.
